Brussel Sprout, Butternut Squash & Farro Salad feat. Chili Turmrific Pistachios
ACTIVE: 50 minutes | TOTAL: 50 minutes | SERVES: 4-6
Ingredients:
2 cups of chopped brussel sprouts
1 half of a butternut squash, cubed and roasted
1/2 cup of cooked farro
3/4 cup of Chili Turmrific Pistachios
2 cups of chicken bone broth (to prepare Farro)
1 tablespoon of dijon mustard
2 teaspoons of honey
4 tablespoons of white wine or sherry vinegar
1 orange, zested and juiced
4 tablespoons of olive oil
Shredded parmesan, to garnish
Instructions:
1) Combine dijon mustard, honey, vinegar, orange zest and juice with olive oil to create the dressings in a large mixing bowl.
2) In the same mixing bowl, add the brussel sprouts, butternut squash, farro and Chili Turmrific Pistachios, and toss to combine.
3) Garnish with parmesan to serve, and enjoy!
